Bu çalışmada, yeni bir tür olan Ribes anatolica Behçet türünün yabani meyvelerinin nem miktarı % 74.69 ± 1.03, kuru madde miktarı % 25.31 ± 1.03, su aktivitesi(aw) 0.948 ± 0.001, Suda çözünen kuru madde miktarı (Briks) 17.96 ± 1.31, pH 4.120 ± 0.013, Titrasyon asitliği 0.94 ± 0.07 (g sitrik asit / 100g), Yüzey rengi değerleri L* 57.79 ± 0.85, a* 10.19 ± 1.70, b* 4.03 ± 1.34, C* 10.98 ± 2.03 ve h° 21.13 ± 3.80, Toplam fenolik madde miktarı 11.37 ± 0.88 (mg G.A.E./ 100g kuru ağırlık) ve Antioksidan kapasitelerini gösteren ABTS değerleri 314.85 ± 52.97 (μmol T.E. / 100g kuru ağırlık) ve DPPH değerleri 213.24 ± 20.32 (μmol T.E. / 100g kuru ağırlık), Fenolik bileşikler μg/g oarak; Gallik asit 3.51±1.86, Protocatechuic asit 22.80±5.88, 4-dihydroxy benzoik asit 19.17±4.89, Syringik asit 13.52±4.29, Trans-cinnamik asit 31.92±18.22, Chlorogenik asit 22.69 ±0.36, Rutin 152.47±17.32, Quercetin-3-O-glucoside 114.71±2.99 ve Kaempferol-3-O-glucoside 32.13 ±2.35 düzeyinde bulunmuştur.
In this study, a new species, Ribes anatolica Behçet, analysis mean values were found as the following; moisture content 74.69 % ± 1.03, dry matter 25.31% ± 1.03, water activity (aw) 0.948 ± 0.001, water soluble solids content(Brix) 17.96 ± 1.31, pH 4.120 ± 0.013, titratable acidity 0.94 ± 0.07 (g citric acid / 100g), surface color values L* 57.79 ± 0.85, a* 10.19 ± 1.70, b* 4.03 ± 1.34, C* 10.98 ± 2.03 and h° 21.13 ± 3.80, Total amount of phenolic substance 11.37 ± 0.88 (mg G.A.E./ 100g dry matter), showing antioxidant capacities, ABTS values 314.85 ± 52.97 (μmol T.E. / 100g dry matter) and DPPH values 213.24 ± 20.32 (μmol T.E. / 100g dry matter), Phenolic compounds in μg/g ; Gallic acid 3.51±1.86, Protocatechuic acid 22.80±5.88, 4-dihydroxy benzoic acid 19.17±4.89, Syringic acid 13.52±4.29, Trans-cinnamic acid 31.92±18.22, Chlorogenic acid 22.69 ±0.36, Rutin 152.47±17.32, Quercetin-3-O-glucoside 114.71±2.99 and Kaempferol-3-O-glucoside 32.13 ±2.35.
